There are many factors and elements that go into making a story memorable, epic and interesting, and one of the most important to make it really work is the character of the protagonist. The growth of Itadori is therefore mainly done by improving his combat skills, while with Yuta we face an internal development.
Out of thoughts of killing himself to prevent anyone from being hurt by Rika’s curse, Yuta instead accepted his situation and used it to his advantage. To date, however, Akutami’s decision regarding the change of registry in the regular series remains clear. Building an entire narrative around a haunted character like Yuta he would have made the story difficult and by choosing a more light-hearted protagonist like Yuji he would have made the story quicker and easier to read and advance.
